Our wonderful friend, Robin, made this awesome Pulled Pork Enchilada recipe, and was SUPER pleased with the results! Dress it up with your favorite toppings, from olives to salsa; sour cream to avocado, and enjoy!
Put pork and 1 can enchilada sauce in slow cooker on low for about 7 hours. Pull out pork with a slotted spoon and shred. Heat up tortillas and fill with meat and a little bit of the juice. Add rice, beans, onions, etc., based on your preference. Roll each burrito over and place in oven safe dish. Add more juice, and some shredded cheese. Bake until cheese is melted. Add more juice, if desired. Serve with beans, rice, chips and salsa!
